Carbon Dioxide
CO2 can exist in all three physical states (gas, liquid, and solid) in a standard operating environment. It is used to carbonate soft drinks, beers, and wine. It is water-soluble and an effective alternative to sulfuric acid in water treatment and pH control.
As a natural antimicrobial, CO2 can prevent fungal and bacterial growth, increasing a food product’s shelf life. Liquid CO2 is a good solvent for many organic compounds, and it is also used to decaffeinate coffee. In temperature applications, CO2 snow is used for dry ingredient cooling, food mixer and blender cooling, and freezing applications. CO2 sold in a solid form is commonly known as “dry ice.”
Nitrogen
Nitrogen is extremely cold (–195.8°C or –320.4°F), and can therefore rapidly freeze food products, preserving their quality, texture, yield and taste.
For products such as vegetable oil and wine, the inert properties of nitrogen make it perfect for expelling any air entrained in the liquid (“sparging”) and protecting liquids in storage tanks by filling the vapor space (“blanketing”). The end result: optimal protection from loss of quality by oxidation.
Nitrogen (and nitrogen mixed with CO2 and oxygen) is used in transport trucks and in Modified Atmosphere Packaging (MAP), to prevent oxidation, mold, insect infestation, and moisture migration and thus increase total shelf-life.
Oxygen
Oxygen is used to improve water quality. In aquaculture, it can enhance fish-growth rates, improve feed-conversion ratios, and reduce mortality rates. In wastewater treatment operations, oxygen is used to increase the effectiveness of biological purification processes.
Hydrogen
Hydrogen is used to hydrogenate liquid oils (such as soybean and other edible oils), transforming them into semi-solid materials such as shortening.
